Lacombe Christian School was on the receiving end of funds from Cilantro and Chive’s most recent ice cream sandwich the ‘Rainbow Monster’.

The School Ice Cream Sandwich Program sees culinary teams at both restaurant locations dream up an ice cream sandwich with some punch every three months, and staff select a local school to benefit from ice cream sandwich sales, kicking back one dollar of every sandwich they sell in-house to a program or project of the school’s choice.

From September to November the ‘Rainbow Monster’ ice cream sandwich was served up in Lacombe.

It included two freshly baked monster cookies with blue monster cookie dough ice cream, rainbow sprinkles, and candy glitter.

One dollar from every ice cream sandwich sold goes towards plans to update the school’s aging west campus playground.

“Our team was thrilled to work alongside students at the school in October for an on-site ice cream sandwich sale,” noted a release. “Students held each other to task and their work ethic coupled with their positive attitude helped us serve up more than 450 ice cream treats, raising some additional funds for the school. A BIG thank-you to school staff and families who supported those efforts!

“On Jan. 20th, we were thrilled to hand over a cheque to Lacombe Christian School for $2,068 which included $1,824 raised from the on-site sale (we’re happy to kick back full proceeds from that pre-order fundraiser).”

Meanwhile, the current ice cream sandwich at the Lacombe location is the ‘Black Forest’.

It includes two chocolate-covered house-baked shortbread cookies, dark cherry ice cream, whipped cream, cherry coulis, and chocolate shavings.

One dollar from every ice cream sandwich sold is going to AlixMAC School in Alix for school technology.
